Chunky Monkey Muffins

These chunky monkey muffins have banana, peanut butter and chocolate chips in them and they are super delicious! I love the chunky monkey flavor combo and they taste like eating a banana with peanut butter and chocolate chips on it.

They have a peanut butter crumble topping that takes them over the top and you can drizzle them with more chocolate if you want to get fancy. The peanut butter crumble topping is something I could actually eat on it’s own if left alone to my own vices. Ha ha.

Making these muffins is super easy and I designed the recipe to be a dump and stir type of recipe because let’s face it, I am in a very busy stage of life and motherhood. I have 4 kiddos and they keep me busy,

So, these can actually be made in a blender if you want them to be extra fast! You can also use a stand mixer or stir them the old fashion way with a bowl and a spoon. Whatever way you make them, I can guarantee they will be delicious!

What you need to make these Chunky Monkey Muffins: (printable recipe is below)

Makes 24 muffins

  • 3 ripe bananas – smashed
  • 1/2 cup salted butter – melted
  • 1/2 cup smooth peanut butter
  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1 tablespoon espresso powder or pero coffee alternative (optional, this just deepens the flavor a little)
  • 1 1/2 cups chocolate chips – I love milk but dark or semi-sweet works too

For the peanut butter crumble:

  • 1/2 cup flour
  • 1/2 cup sugar
  • Dash of salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup peanut butter – melted
  • 1/2 cup chocolate chips – melted, for drizzling on top

Instructions

  1. Preheat the oven to 350 F.
  2. In a mixing bowl or blender, add the bananas, butter, peanut butter, flour, sugar, baking powder, salt, eggs, milk and espresso or pero (if using), then mix together until a smooth batter forms.
  3. Add the chocolate chips and stir them into the batter.
  4. Place muffin liners in muffin tin or grease well, then spoon in batter to muffin tin.
  5. In another bowl make the peanut butter crumble topping by adding the flour, sugar and salt together and stirring, then add the vanilla extract and melted peanut butter and mix until a crumble mixture forms.
  6. Sprinkle the crumble mixture over the muffin batter then bake for roughly 20 minutes or until the muffins look baked. Note that these muffins are very soft when they are warm, they firm up when they cool.
  7. Melt the chocolate for the drizzle on top then drizzle on top with a spoon or I use a zip lock bag with a corner snipped to make it look pretty.
  8. Enjoy!
