Easy Boysenberry Turnovers

These easy boysenberry turnovers are delicious and make for a quick and easy semi-homemade pastry to make for a breakfast, brunch or dessert.

We go to Knotts berry farm amusement park in California every couple of years and they always have the boysenberry festival, where they have food stalls filled with boysenberry everything, sweet and savory. They also have boysenberry juice on tap in their soda machines and we love it!

After going for Spring break I knew I wanted to make some boysenberry goodness, so I went online and bought some canned boysenberries to make some delicious treats, these easy boysenberry turnovers are the first one I made and I loved how they turned out!

What you need to make these easy boysenberry turnovers: (Printable recipe card is below)

Makes ~ 10 turnovers

  • 1 sheet puff pastry – thawed
  • 1/2 cup boysenberries – fresh or canned
  • 4 tablespoons sugar
  • 1 egg
  • 1 tablespoon water
  • Sugar for sprinkling on top

For the glaze:

  • 1/2 cup powdered sugar
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 425 F.
  2. Roll out puff pastry and cut into 9 squares.
  3. Toss berries in sugar and add about 1 tablespoon of berries to the center of each square.
  4. Fold over and press together ends of dough.
  5. Mix together egg and water and brush over the turnovers, followed by a generous sprinkle of sugar.
  6. Bake for ~15 minutes or until tops are golden brown.
  7. Mix together glaze ingredients and drizzle on top, enjoy!
