Small Batch Apricot Jam

This small batch apricot jam makes 1 pint of delicious apricot jam!

Ingredients

  • 2 cups apricots - pits removed
  • 1 1/4 cups sugar
  • 1/4 cup water
  • 3 tablespoons lemon juice
  • 1 1/2 tablespoons pectin the no sugar added one works great

Instructions

  • Add all ingredients into a sauce pan.
  • Simmer for 10-15 minutes then use an immersion blender to make the jam smooth.
  • Place into a clean jar then refrigerate and use within about 3 months.
