Small Batch Apricot Jam

I love this small batch apricot jam! Apricot jam is one of my all time favorite jams. It’s perfectly tangy and fruity, so yummy! I love that this recipe only takes about 20 minutes to make and you only need 2 cups of fruit to make it!

My mother in law has apricot trees but unfortunately we live about 4 hours away from her, so when we visit I get a small box from her of apricots, It isn’t enough to make a huge batch of jam but just enough to enjoy some and then make 1 pint of jam.

This jam can be water bath canned but I love that with just 1 pint I don’t have to worry about it. It will last in the refrigerator for about 3 months, so it’s perfect for me.

I use pectin in this recipe just to ensure I get a thick jam but you can make this without it, It will be a little thinner jam without it though. I like to buy the bottle of no sugar added pectin, that way I can keep it in my pantry and use it whenever I need to because it lasts for a long time.

Makes 1 pint

  • 2 cups apricots – pits removed
  • 1 1/4 cups sugar
  • 1/4 cup water
  • 3 tablespoons lemon juice
  • 1 1/2 tablespoons pectin (the no sugar added one works great)

Instructions

  1. Add all ingredients into a sauce pan.
  2. Simmer for 10-15 minutes then use an immersion blender to make the jam smooth.
  3. Place into a clean jar then refrigerate and use within about 3 months.
