Vanilla Cake With Strawberries

This vanilla cake with strawberries is the perfect summer dessert! The cake is light and fluffy and delicious and the sweetened and slightly thickened whipped cream and strawberries on top make it so tasty!

I love a light and fluffy summer dessert that features natures bounty! One of my favorite things!

This cake is super easy to throw together, nothing fancy, basically just dump, mix and bake and you are done.

The topping is a slightly sweetened and thickened whipped cream. Mine almost got too whipped because I walked out of the kitchen while my mixer was doing it’s thing, we almost had butter, but I saved it in the nick of time. It still tasted delicious!

The whipped cream has powdered sugar added so it gets just a little thicker than whipped cream without it and I love the addition.

The strawberries get tossed in some sugar so the natural flavors of strawberries gets extenuated even more.

Makes 1 – 9 x 13 cake, serves 8

  • 1 cup milk
  • 2 tablespoons white vinegar
  • 1/2 cup salted butter – softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt

For the whipped cream:

  • 1 1/2 cups whipping cream
  • 1/3 cup powdered sugar

For the strawberries:

  • 16 ounces strawberries – 1 package, sliced
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 350 F.
  2. In a small bowl, add milk and vinegar and stir together then set aside.
  3. In a large mixing bowl, add butter and sugar and mix well then add eggs and vanilla and stir again.
  4. Add the flour, baking powder, salt and milk mixture and mix batter until it’s smooth.
  5. Grease pan and add batter.
  6. Bake for about 30-35 minutes or until the cake is risen in the center and baked through.
  7. Cool cake completely.
  8. Whip together the cream and powdered sugar.
  9. Slice strawberries and sprinkle with sugar.
  10. Top cake with whipped cream and strawberries and enjoy.
