Healthy Chocolate Chip Cookie Skillet

Healthy and delicious ooey gooey chocolate chip cookie skillet!

Ingredients

  • 1/2 cup almond flour
  • 1/3 cup coconut sugar - monk fruit or stevia can also be used
  • 1 tablespoon flour gluten free baking mix works too
  • pinch of salt
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1 tablespoon vegetable oil or butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips or sugar free chocolate chips
  • Optional - cool whip and dark chocolate reduced sugar hot fudge for on top.

Instructions

  • Pre-heat oven to 375 F.
  • In a bowl, add almond flour, coconut sugar, flour, salt, baking soda and stir together.
  • Add the egg, oil and vanilla and stir.
  • Stir in dark chocolate chips and add to greased skillet or pans.
  • Bake for 10-12 minutes or until the batter is to your desired done-ness. I like mine a little doughy still.
  • Serve as is or top with cool whip and sugar free chocolate syrup or hot fudge.
