Greek Lemon Pepper Chicken

Ingredients

  • 4 Chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon garlic minced
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1 lemon sliced on top
  • 1/2 cup water

Instructions

  • Add olive oil and garlic to a oven proof pan and saute for 1 minute.
  • Leave the heat on medium-high and add chicken breast and sprinkle the tops with dried oregano, dried parsley, salt and black pepper.
  • Slice a lemon and lay the slices over the tops of the chicken.
  • Add 1/2 cup water and simmer on stove for 3 minutes.
  • Cover with aluminum foil and bake for 30 minutes.
  • Uncovered chicken and bake for 10 more minutes.
  • Spoon the sauce on the bottom of the pan over the tops of the chicken then
  • Broil for 3 minutes while spooning the sauce over the top every minute or so.
  • Remove from oven and let rest for about 7 minutes then enjoy.
