Carrot Cake Cookies

Ingredients

  • 2/3 cups brown sugar
  • 1/3 cup sugar
  • 1/2 cup butter - softened
  • 2 eggs
  • 1 cup shredded carrots
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the frosting:
  • 2 cups powdered sugar
  • 2 tablespoon butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 teaspoon cinnamon
  • tablespoons *For cream cheese variation - switch out butter for 2cream cheese

Instructions

  • Preheat oven to 375 F.
  • Add brown sugar, sugar, and butter and cream together.
  • Add eggs, vanilla and shredded carrots.
  • In a bowl, add flour, cinnamon, nutmeg, baking soda and salt and stir.
  • Pour into butter mixture and stir well.
  • Spoon into a greased cookie sheet.
  • Bake for 10-12 minutes.
  • Cool.
  • In a mixing bowl, add all frosting ingredients and whisk together until smooth.
  • Frost cooled cookies and enjoy!
