For the frosting:

powdered sugar

tablespoon
butter

teaspoon
vanilla
pinch
of salt

cinnamon
tablespoons
*For cream cheese variation - switch out butter for 2cream cheese
Instructions
Preheat oven to 375 F.
Add brown sugar, sugar, and butter and cream together.
Add eggs, vanilla and shredded carrots.
In a bowl, add flour, cinnamon, nutmeg, baking soda and salt and stir.
Pour into butter mixture and stir well.
Spoon into a greased cookie sheet.
Bake for 10-12 minutes.
Cool.
In a mixing bowl, add all frosting ingredients and whisk together until smooth.
Frost cooled cookies and enjoy!
