Carrot Cake Cookies

I love carrot cake and these carrot cake cookies taste just like the cake but only take a few minutes to bake, frost and enjoy! They are soft, a little cakey, and full of yummy spices that will make you feel loved.

You can customize these cookies to your liking by adding pecans, walnuts, coconut, raisins, crushed pineapple or even chocolate chips if you would like. I have found that everyone likes there carrot cake slightly different in terms of the add in’s so this recipe is a great base that you can add to if you want.

What you need to make carrot cake cookies:

Makes 24 cookies

  • 2/3 cups brown sugar
  • 1/3 cup sugar
  • 1/2 cup butter – softened
  • 2 eggs
  • 1 cup shredded carrots
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Optional add in’s:

  • Pecans
  • walnuts
  • raisins
  • coconut flakes
  • chocolate chips
  • Crushed pineapple

For the frosting:

  • 2 cups powdered sugar
  • 2 tablespoon butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 teaspoon cinnamon
  • *For cream cheese variation – switch out butter for 2 tablespoons cream cheese

Instructions

  1. Preheat oven to 375 F.
  2. Add brown sugar, sugar, and butter and cream together.
  3. Add eggs, vanilla and shredded carrots.
  4. In a bowl, add flour, cinnamon, nutmeg, baking soda and salt and stir.
  5. Pour into butter mixture and stir well.
  6. Spoon into a greased cookie sheet.
  7. Bake for 10-12 minutes.
  8. Cool.
  9. In a mixing bowl, add all frosting ingredients and whisk together until smooth.
  10. Frost cooled cookies and enjoy!
