Cuban Mojo Beef Lettuce Cups

Ingredients

  • 1 pound ground beef
  • 1/2 cup Cuban mojo sauce - That recipe is below or HERE
  • 1 cup bell peppers - sliced
  • 1 cup red onions - sliced
  • 1 tablespoon olive oil
  • Sprinkle of salt
  • 1/2 cup water
  • 12 in iceberg lettuce leaves - large ones slicedhalf
  • 1/4 cup feta crumbles
  • 1 - 15 ounce can black beans

Instructions

  • Brown beef and add Cuban mojo sauce.
  • In another pan, add olive oil, bell peppers. red onion and salt and saute over medium high heat. Add 1/2 cup water and cook until water reduces completely and peppers and onions caramelize.
  • Slice lettuce cups.
  • Fill with black beans, mojo beef, grilled onions and sprinkle with feta cheese.
  • Enjoy!
