Cuban Mojo Beef Lettuce Cups

These Cuban mojo beef lettuce cups are filled to the brim with delicious flavors. The meat gets mixed with Cuban mojo sauce, which is an orange, lime, oregano, garlic and other spices sauce that gives the meat a nice bite and balance. The grilled bell peppers and red onion compliment the mojo sauce and the means add even more flavor and balance. Even the crispy lettuce has it’s place! I like to finish them off with a little feta cheese and that brings everything in harmony.

If you want to leave the feta off the flavors are still delicious.

This meal comes together prep to finish in less than 30 minutes too. So it’s the perfect quick and easy weeknight dinner!

What you need to make cuban mojo beef lettuce cups:

serves 4 people

  • 1 pound ground beef
  • 1/2 cup Cuban mojo sauce – That recipe is below or HERE
  • 1 cup bell peppers – sliced
  • 1 cup red onions – sliced
  • 1 tablespoon olive oil
  • Sprinkle of salt
  • 1/2 cup water
  • 12 iceberg lettuce leaves – large ones sliced in half
  • 1/4 cup feta crumbles
  • 1 – 15 ounce can black beans

Instructions

  1. Brown beef and add Cuban mojo sauce.
  2. In another pan, add olive oil, bell peppers. red onion and salt and saute over medium high heat. Add 1/2 cup water and cook until water reduces completely and peppers and onions caramelize.
  3. Slice lettuce cups.
  4. Fill with black beans, mojo beef, grilled onions and sprinkle with feta cheese.
  5. Enjoy!

What you need to make Cuban mojo sauce:

makes ~1/2 cup sauce

  • 2 tablespoons garlic – minced
  • 1 tablespoon olive oil
  • 1 cup orange juice – no pulp
  • 2 tablespoons lime juice
  • dash of cayenne pepper
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1/2 teaspoon cumin
  • 1/8 teaspoon black pepper
  • 1 teaspoon salt
  • 1/8 teaspoon chili powder
  • 2 tablespoon sugar
  • 1 tablespoon water
  • 1 tablespoon cornstarch

Instructions

  1. In a sauce pan, add garlic and olive oil and saute for 1 minute on medium high heat.
  2. Add orange juice, lime juice, cayenne pepper, dried oregano, bay leaf, cumin, black pepper, salt, chili powder and sugar.
