Thai Salad

Easy and delicious Thai inspired flavors in a filling salad!

Ingredients

  • 3 cups crispy romaine lettuce
  • 1 cup cooked chicken breast - chopped into large chunks
  • 1/4 cup peanuts
  • 1/2 cup shredded carrots
  • 1/4 cup green onions - diced
  • 1/2 cup shredded cabbage - purple or green
  • 1/2 cup bell peppers - sliced into thin strips
  • optional - Cilantro
  • For the peanut dressing:
  • 2 tablespoons peanut butter
  • 2 tablespoons honey
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 tablespoon rice vinegar

Instructions

  • Combine all of the ingredients in a bowl.
  • Add dressing and enjoy!
  • For the peanut dressing:
  • Mix all ingredients together until smooth. Try not to drink all of the dressing at once!
