Thai Salad

Want a yummy and healthy lunch that will leave you filling full and satisfied but not weighed down? This Thai salad is for you! You can prep this salad the night before if you are bringing it into work or won’t have prep time before lunch. I love the tastes of Thai food and this salad is fresh, easy and delicious! The peanut sauce is something I could drink and I literally lick the bowl whenever I make it.

What you need for this Thai salad:

Serves 2 people

For the Salad:

  • 3 cups crispy romaine lettuce
  • 1 cup cooked chicken breast – chopped into large chunks
  • 1/4 cup peanuts
  • 1/2 cup shredded carrots
  • 1/4 cup green onions – diced
  • 1/2 cup shredded cabbage – purple or green
  • 1/2 cup bell peppers – sliced into thin strips
  • Optional – Cilantro

For the Peanut dressing:

  • 2 tablespoons Peanut Butter
  • 2 tablespoons Honey
  • 2 tablespoons Sweet Chili Sauce
  • 2 tablespoons Soy Sauce
  • 2 tablespoon Rice Vinegar

Instructions for the salad:

  1. Combine all of the ingredients in a bowl.
  2. Add dressing and enjoy!

Instructions for peanut dressing:

  1. Mix all ingredients together until smooth. Try not to drink all of the dressing at once!
