2tablespoonssesame oil
1poundchicken breast - uncookedchopped into small pieces
Pinchsalt
Pinchblack pepper
1/2teaspoongarlic powder
2tablespoonssoy sauce or soy sauce substitute
1/2teaspoonsriracha - optional
2tablespoonshoney
1/2teaspoonfish sauce - optional
peanut sauce:
2tablespoonsrice wine vinegar
1tablespoonbrown sugar
1tablespoonhoney
2tablespoonspeanut butter - smooth
2tablespoonssoy sauce
1/2teaspoonsriracha or more for heat - optional
Vegetable and other toppings:
carrots - thinly sliced
cucumbers - thinly sliced
green onions - sliced
fresh cilantro
chopped peanuts
Bean sprouts - optional
shredded cabbage - optional
Bell Peppers - sliced thinly - optional
1cupcooked rice noodles - optional
1/2cuppeanuts - optional
1head of lettucebutter, romaine or lettuce of choice for the cups
Instructions
Mix the sauce ingredients together in a sauce pan until the peanut butter melts, then cool sauce.
Prepare your lettuce and vegetables and if adding rice noodles, then cook, drain, cool and set them aside.
In a skillet on medium/high heat, add sesame oil, chopped chicken, salt, pepper, garlic powder, soy sauce, sriracha, honey and fish sauce then cook until the chicken is cooked through.
Serve the chicken mixture with vegetables, desired toppings and peanut sauce in the lettuce cups and enjoy!
