Thai chicken lettuce cups

Thai flavored chicken with vegetables, desired topping and peanut sauce in a lettuce cup.

Ingredients

  • 2 tablespoons sesame oil
  • 1 pound chicken breast - uncooked chopped into small pieces
  • Pinch salt
  • Pinch black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons soy sauce or soy sauce substitute
  • 1/2 teaspoon sriracha - optional
  • 2 tablespoons honey
  • 1/2 teaspoon fish sauce - optional
  • peanut sauce:
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 2 tablespoons peanut butter - smooth
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sriracha or more for heat - optional
  • Vegetable and other toppings:
  • carrots - thinly sliced
  • cucumbers - thinly sliced
  • green onions - sliced
  • fresh cilantro
  • chopped peanuts
  • Bean sprouts - optional
  • shredded cabbage - optional
  • Bell Peppers - sliced thinly - optional
  • 1 cup cooked rice noodles - optional
  • 1/2 cup peanuts - optional
  • 1 head of lettuce butter, romaine or lettuce of choice for the cups

Instructions

  • Mix the sauce ingredients together in a sauce pan until the peanut butter melts, then cool sauce.
  • Prepare your lettuce and vegetables and if adding rice noodles, then cook, drain, cool and set them aside.
  • In a skillet on medium/high heat, add sesame oil, chopped chicken, salt, pepper, garlic powder, soy sauce, sriracha, honey and fish sauce then cook until the chicken is cooked through.
  • Serve the chicken mixture with vegetables, desired toppings and peanut sauce in the lettuce cups and enjoy!
