Thai Chicken Lettuce Cups

These Thai chicken lettuce cups are so flavorful and yummy! I love anything Thai flavored and these are no exception. They are a fresh and healthy meal that’s perfect for any day of the week.

I always joke that Thai food is my love language, except it isn’t a joke. I seriously love all things Thai food. I love the balance of flavors that happen in Thai cuisine, the sweet, sour, spicy, creamy, crispy, fresh, herby combinations just makes my taste buds and heart sing.

This recipe makes for such a quick and easy dinner that comes together in under 30 minutes, prep to finish. It’s a great way to eat healthy and still enjoy amazing flavors!

What you need to make these Thai Chicken Lettuce Cups:

Serves 4-6

  • 2 tablespoons sesame oil
  • 1 pound chicken breast – uncooked, chopped into small pieces
  • Pinch salt
  • Pinch black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons soy sauce or soy sauce substitute
  • 1/2 teaspoon sriracha – optional
  • 2 tablespoons honey
  • 1/2 teaspoon fish sauce – optional

Peanut Sauce:

  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 2 tablespoons peanut butter – smooth
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sriracha or more for heat – optional

Vegetable and other toppings:

  • carrots – thinly sliced
  • cucumbers – thinly sliced
  • green onions – sliced
  • fresh cilantro
  • chopped peanuts
  • Bean sprouts – optional
  • shredded cabbage – optional
  • Bell Peppers – sliced thinly – optional
  • 1 cup cooked rice noodles – optional
  • 1/2 cup peanuts – optional
  • 1 head butter, romaine, iceberg or lettuce of choice for the cups

Instructions

  1. Mix the sauce ingredients together in a sauce pan until the peanut butter melts, then cool sauce.
  2. Prepare your lettuce and vegetables and if adding rice noodles, then cook, drain, cool and set them aside.
  3. In a skillet on medium/high heat, add sesame oil, chopped chicken, salt, pepper, garlic powder, soy sauce, sriracha, honey and fish sauce then cook until the chicken is cooked through.
  4. Serve the chicken mixture with vegetables, desired toppings and peanut sauce in the lettuce cups and enjoy!
