For the Cake:

Almond flour

cup
white or wheat flour
1/2

coconut sugar

tablespoon
white sugar

teaspoon
baking powder
1/2
teaspoon
salt

tablespoon
vanilla extract or flavoring
1
egg
1/2
cup
milk
1/4
cup
vegetable oil
1
teaspoon
lemon juice
For the topping:
1/3
cup
Strawberry greek yogurt
1/4
cup
whipping cream

large strawberries
Instructions
Preheat oven to 350 F.
Add almond flour, flour, coconut sugar, white sugar, baking powder and salt and stir.
Add vanilla, egg, milk, oil and lemon juice to the flour mixture and blend until smooth.
Grease an 8 x 8 baking pan. OR 4 - 3" cake rounds OR line your cupcake tins with liners.
Bake 8 x 8 cake for ~23 minutes or until a tooth pick can be inserted and come out clean.
Bake 4 - 3" rounds for ~18 minutes.
Bake cupcakes for ~15 minutes.
Cool cakes before topping.
Instructions for the topping:
Slice your strawberries.
In a mixing bowl, add yogurt and whipping cream and beat together with a whisk until the mixture is fluffy.
Top cake, cupcakes, or mini cakes with topping and then fresh strawberries.
