Healthier Strawberry Topped Cake

This healthier strawberry topped cake is super moist and so yummy! It is one of my very favorites! The cake it’s self is not strawberry but a rich vanilla cake that perfectly compliments the strawberry toppings!

It is made with almond flour and coconut sugar so it can be metabolized better by the body instead of a sugar rush that comes from more carbohydrates and refined sugar. If you are new to healthier bakes, trust me the almond flour and coconut sugar have no negative effects on the flavor or sweetness of the cake! In fact, they add to it’s charm and give it the best texture and depth of flavor. My sugar loving husband loved this cake and asked for more! The crumb is super delicate and delicious.

What you need to make healthier strawberry topped cake:

serves 4-6 people – makes 1 – 8 x 8 pan, 4 – 3″ pans, or 12 standard cupcakes

For cake:

  • 1/2 cup Almond flour
  • 1/2 cup white or wheat flour
  • 1/2 cup coconut sugar
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract or flavoring
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon lemon juice

For topping:

  • 1/3 cup Strawberry Greek yogurt
  • 1/4 cup whipping cream
  • 6 large strawberries

Instructions for cake:

  1. Preheat oven to 350 F.
  2. Add almond flour, flour, coconut sugar, white sugar, baking powder and salt and stir.
  3. Add vanilla, egg, milk, oil and lemon juice to the flour mixture and blend until smooth.
  4. Grease an 8 x 8 baking pan. OR 4 – 3″ cake rounds OR line your cupcake tins with liners.
  5. Bake 8 x 8 cake for ~23 minutes or until a tooth pick can be inserted and come out clean.
  6. 4 – 3″ rounds for ~18 minutes.
  7. Cupcakes for ~15 minutes.
  8. Cool cakes before topping.

Instructions for topping:

  1. Slice your strawberries.
  2. In a mixing bowl, add yogurt and whipping cream and beat together with a whisk until the mixture is fluffy.
  3. Top cake, cupcakes, or mini cakes with topping and then fresh strawberries.
