Beef and Pea Stroganoff

Ingredients

  • 1/2 cup mushrooms - finely diced
  • 1/2 cup onion - finely diced
  • 2 tablespoons olive oil
  • 1/2 pound lean ground beef
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 teaspoon black pepper
  • 2 tsp Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1-1/2 cup beef stock
  • 1/2 cup sour cream or greek yogurt
  • 1 pound egg noodles - I used rotini in this picture but egg noodles are traditional.
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1/2 cup frozen peas

Instructions

  • Boil your noodles in another pot until they are al dente.
  • Add mushrooms, onion, olive oil and ground beef to a large pot.
  • Cook until beef is cooked.
  • Add garlic powder, salt, pepper, Worcestershire sauce, soy sauce, beef stock and sour cream.
  • In a separate bowl combine cornstarch and water.
  • Whisk mixture into beef mixture.
  • Bring mixture to a boil, it should thicken slightly.
  • Stir in the al dente noodles and frozen peas.
  • Stir over low heat until peas warm up.
  • Serve.
