Chicken Rainbow Crunch Salad

Ingredients

  • 4 cups chopped romaine lettuce
  • 2 cups spinach
  • 1 cup chopped rotisserie chicken breast
  • 3/4 cup baby Bella mushrooms - sliced
  • 1/2 cup farro - cooked and cooled
  • 1/2 cup cucumbers - sliced
  • 2 green onions - sliced
  • 1/4 cup feta- crumbles
  • 1/2 cup pomegranates
  • 1/2 cup slivered almonds
  • Orange poppy seed vinaigrette
  • 1/2 cup strawberries quartered

Instructions

  • Add all ingredients to a large bowl or separate into 3 individual bowls.
  • Mix if that is your salad style or keep all the toppings on top if that makes you happy! No wrong way to do it!
  • Top with vinaigrette and enjoy!
