Chicken Rainbow Crunch Salad

I love salad and a salad with lots of crunch and different textures makes me a happy woman! This chicken rainbow crunch salad is a texture and crunch lovers dream come true!

My chicken rainbow crunch salad is packed with just about every texture, from chewy farro, to juicy strawberries, sweet and sour pop-in-your-mouth pomegranate seeds, crunchy almonds, soft and salty feta cheese, crispy and refreshing cucumbers and more! I’m telling you, it’s a rainbow of crunchy goodness! Plus, all of the flavors harmonize so well together!

I use my orange poppy seed vinaigrette in this chicken rainbow crunch salad recipe but you can use whatever dressing you desire. The poppy seed vinaigrette add even more crunch and I just love the flavors from poppy seeds! What you need to make this Rainbow Crunch Salad:

Serves 3 people
  • 4 cups chopped romaine lettuce
  • 2 cups spinach
  • 1 cup chopped rotisserie chicken breast
  • 3/4 cup baby Bella mushrooms – sliced
  • 1/2 cup farro – cooked and cooled
  • 1/2 cup cucumbers – sliced
  • 2 green onions – sliced
  • 1/4 cup feta- crumbles
  • 1/2 cup strawberries – quartered
  • 1/2 cup pomegranates
  • 1/2 cup slivered almonds
  • Orange poppy seed vinaigrette Recipe here or favorite poppy seed dressing

Instructions

  1. Add all ingredients to a large bowl or separate into 3 individual bowls.
  2. Mix if that is your salad style or keep all the toppings on top if that makes you happy! No wrong way to do it!
  3. Top with vinaigrette and enjoy!

Orange vinaigrette

Ingredients

  • 1 orange – juiced and zested
  • 1 green onion – the bottom white and light green portion – finely diced
  • 1/3 cup white vinegar
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup olive oil

Instructions

  • Zest and juice your orange and finely dice your green onion.
  • Add the white vinegar and sugar to a small sauce pan and bring mixture to a boil.
  • Turn heat off after 1 minute.
  • Add salt, pepper, orange zest, orange juice and olive oil and whisk well.
  • Let cool.
  • Whisk or shake well before using.
