Instructions
In a small sauce pan, combine fresh cranberries, sugar, and fresh orange juice. Stir over medium high heat until mixture begins to boil, reduce to a simmer and simmer until the cranberries burst. Sauce will turn bright red. Simmer for an additional 1-2 minutes after berries have burst then remove from heat. Cranberries have a lot of pectin, the thickening agent for jams and jellies, so the sauce will thicken as the sauce cools. You can blend the mixture with an immersion blender to desired consistency. If you would like a smooth cranberry sauce with no chunks you can strain through a fine mesh strainer before the mixture thickens.
