Smokey Creamy Vegetable Chowder

Ingredients

  • 1 onion diced
  • 1 Tablespoon olive oil
  • 2 Stalks Celery diced
  • 1/2 Cup carrots diced
  • 5 Slices Cooked Bacon diced
  • 1 Large Zucchini diced *It is optional to smoke or grill the zucchini before dicing, it just adds a little extra smokiness but it is totally optional.
  • 1 Cup Corn
  • 1 teaspoon Salt
  • 1/2 teaspoon pepper
  • 3 Tablespoons Flour
  • 1 1/2 Tablespoons Butter
  • 4 Cups Chicken Stock
  • 1/2 Cup Heavy Whipping Cream
  • 1/3 Cup Cup White Cheddar
  • 1/4 teaspoon dried thyme

Instructions

  • Add olive oil, and butter to a stock pot on medium high heat. Add all of the vegetables, bacon, salt, pepper and thyme and saute on the olive oil and butter for 4-5 minutes. Sprinkle the flour over the vegetables and stir it in. Pour in the chicken stock and stir. Bring to a boil then reduce heat to a simmer and simmer for 7-10 minutes or until carrots and vegetables are soft. Add the cream and stir in the cheddar cheese. Taste and adjust salt if needed.
