Smokey Creamy Vegetable Chowder

It’s soup season ya’ll! I love a tasty comforting bowl of soup! I am also always up for a big bowl of chowder and some rustic bread to dip into it! YUM! This smokey creamy vegetable chowder is a family favorite and everyone from my 2 year old to my husband loves it!

For the record, I also like soup all year round. When I was pregnant with my first born, we lived in the dessert and the summers were HOT so soup is really not a sane option! Yet all I craved was soup! One day in the height of my morning sickness I NEEDED some soup A.S.A.P. and I was too sick to make some myself so my sweet husband drove me around town trying to find hot soup in the 115 degree weather. Yes, my husband is a saint. We found a little shop serving a bacon and potato chowder and I ate it in a completely primal way in silence as my husband ate ice cream and I’m sure the workers thought I was crazy! If you’ve been in that state of body and mind, you know exactly what I am talking about.

Back to this smokey creamy vegetable chowder! This soup is filled with hearty vegetables and is oh SO delicious! Also, quick and easy to make!

 

What you need

Serves 6

1 Onion

1 Tablespoon Olive Oil

2 Stalks Celery, diced

1/2 Cup carrots, Diced

5 Slices bacon – cooked and diced – turkey bacon also works great!

1 Large Zucchini, diced. *It is optional to smoke or grill the zucchini before dicing, it just adds a little extra smokiness but it is totally optional.

1 Cup corn

1 teaspoon salt

1/2 teaspoon pepper

3 Tablespoons Flour

1 1/2 Tablespoons Butter

4 Cups Chicken Stock

1/2 Cup heavy whipping cream

1/3 Cup White Cheddar

1/4 Teaspoon Dried Thyme

Add olive oil, and butter to a stock pot on medium high heat. Add all of the vegetables, bacon, salt, pepper and thyme and saute on the olive oil and butter for 4-5 minutes. Sprinkle the flour over the vegetables and stir it in. Pour in the chicken stock and stir. Bring to a boil then reduce heat to a simmer and simmer for 7-10 minutes or until carrots and vegetables are soft. Add the cream and stir in the cheddar cheese. Taste and adjust salt if needed.
