Cauliflower Fried Rice

Ingredients

  • 2 tablespoons sesame oil
  • 12 ounces frozen cauliflower
  • 1/2 teaspoon garlic powder
  • 1 egg
  • 2 tablespoons soy sauce or 4 tablespoons coconut amino acids
  • 2 green onions
  • 1 cup peas and carrots
  • 1/2 tsp salt - more to taste
  • 1 cup ham - optional

Instructions

  • Cook the Cauliflower rice according to the package directions.
  • While the cauliflower is cooking. In a separate bowl, egg, coconut aminos or soy sauce with garlic powder and salt.
  • Heat a frying pan with toasted sesame oil and dump the cauliflower rice in.
  • Stir in some frozen peas, carrots, sliced green onions and ham if adding and cook for 4-ish minutes.
  • Pour the egg mixture over the cauliflower mixture and stir for an additional 3 or so minutes or until the egg is cooked.
