6 small zucchiniSpiralized or cut into thin slices
1/2Cup Chopped Sundried Tomatoes
1 1/2teaspoonGarlic Powder
1 teaspoon Oregano
1/2 Cup Kalamata Olives
3/4 Cup Feta
2 Pounds ShrimpPeeled and de-veined
3 Tablespoonsolive oil
1/2 teaspoon SaltMore to taste
1 LemonCut into wedges
Instructions
Prepare Zucchini with Spiralizer or cut into long thin noodle like strips.
Season Shrimp with a sprinkle of salt and about 1/2 tsp garlic powder.
Heat 1 Tablespoon of Olive oil over medium high heat in a frying pan and cook the shrimp until done, depending on the size of shrimp you are using around 4-5 minutes or when they are no longer translucent and slightly pink and firm. Once cooked remove from pan and set aside.
Heat the same pan to medium high heat and add 2 additional tablespoons of Olive Oil, Zucchini noodles, Sun dried tomatoes, Garlic Powder, Salt, Oregano and stir until the zucchini is fairly softened. About 5 minutes. Reduce your heat and add pitted Kalamata Olives, Feta Cheese, and cooked Shrimp. Squeeze some fresh lemon over the top before serving!
