Cut all the Vegetables and try to make them all around the same size so they cook evenly.
In a stock pot heat up Olive Oil over medium high heat.
Add Onion, Zucchinis, Celery, Green Cabbage and Carrots and stir continuously for about 5 minutes or until the vegetables start to soften and get some color.
Add 6 Cup Chicken or vegetable stock, Dried Basil, Italian Herbs, Black pepper, Salt, Bay leaves and stir.
When the mixture reaches a boil, Reduce the heat to medium low and let it simmer for about 7 minutes.
In a frying pan, add the diced chicken breast and cook until cooked through and the outside begins to get some color.
Add 2 Cups of Chicken or Vegetable stock to the chicken pan and stir. (this is called de-glazing and will pick up all the flavor from the chicken)
Pour the Chicken Stock and cooked chicken to the stock pot with the vegetables that are simmering.
Add the Alphabet Noodles and cook for 4 or so minutes, or until the vegetable noodles are cooked. (you don't want to over cook them or they will dissolve into the soup)
Add the milk of Choice and stir. Taste the soup and see if additional Salt is needed. Enjoy!
