Alphabet Soup

Are you ever too old for alphabet soup? The answer is no, you are never too old! Why is it so fun to eat your words… in this case? Probably because they are really really are delicious! This soup always spikes good dinner table conversation and a few giggles when the kids find a funny word or two. I love making a good soup that makes everyone happy and this one is also packed with nutritional goodness. Parental Win!

 

 

Now the question is.. ARE YOU A DIPPER? Me and my kids are dippers for life. So I serve this soup with some buttered bread or a big hunk of artisan bread. Yum!

Alphabet Soup

This soup is a fun family favorite.

Ingredients

  • 1 medium onion Chopped
  • 1 small Yellow zucchini Chopped into bite sized peices
  • 1 small Green Zucchini Chopped into bite sized pieces
  • 3 Stalks Celery Diced
  • 1 Cup Green Cabbage Chopped into bite sized pieces
  • 4 Large carrots Chopped into bite sized pieces
  • 2 Tablespoons olive oil
  • 8 Cups chicken or vegetable stock
  • 1 teaspoon Dried Basil or 1/4 cup fresh basil chopped
  • 1 Tablespoon Italian Herbs
  • 1/2 teaspoon black pepper
  • 1 Teaspoon Salt Plus more to taste
  • 3 Bay leaves
  • 1 Medium Chicken Breast
  • 1 1/2 Cups Alphabet Noodles
  • 1 Cup Milk of choice *If using an alternative milk like almond or soy then opt for a non flavored

Instructions

  • Cut all the Vegetables and try to make them all around the same size so they cook evenly.
  • In a stock pot heat up Olive Oil over medium high heat.
  • Add Onion, Zucchinis, Celery, Green Cabbage and Carrots and stir continuously for about 5 minutes or until the vegetables start to soften and get some color.
  • Add 6 Cup Chicken or vegetable stock, Dried Basil, Italian Herbs, Black pepper, Salt, Bay leaves and stir.
  • When the mixture reaches a boil, Reduce the heat to medium low and let it simmer for about 7 minutes.
  • In a frying pan, add the diced chicken breast and cook until cooked through and the outside begins to get some color.
  • Add 2 Cups of Chicken or Vegetable stock to the chicken pan and stir. (this is called de-glazing and will pick up all the flavor from the chicken)
  • Pour the Chicken Stock and cooked chicken to the stock pot with the vegetables that are simmering.
  • Add the Alphabet Noodles and cook for 4 or so minutes, or until the vegetable noodles are cooked. (you don't want to over cook them or they will dissolve into the soup)
  • Add the milk of Choice and stir. Taste the soup and see if additional Salt is needed. Enjoy!
