Garlic Basil Chicken And Butternut Squash Noodles

Ingredients

  • 10.5 ounces or ~3 cups butternut squash noodles
  • 1/2 cup water
  • 2 teaspoons olive oil
  • 4 cloves garlic- minced
  • 1 large tomato - diced
  • 1/4 cup fresh basil - sliced thinly OR 2 tablespoons dried basil
  • 2 tablespoons Parmesan cheese - /plus more for on top
  • 1 chicken breast - cooked or rotisserie chicken - diced
  • salt and pepper to taste

Instructions

  • In a large pan, add butternut squash noodles and water to pan.
  • Bring mixture to a boil, cover and cook for 5 minutes.
  • Add olive oil, garlic and tomato and stir.
  • Cook for 3-4 minutes.
  • Add fresh basil, Parmesan cheese and chicken breast and stir well.
  • Top with more basil if desired and more Parmesan cheese and salt and pepper to taste.
  • Enjoy!
