Garlic Basil Chicken And Butternut Squash Noodles

Ingredients

or ~3 cups butternut squash noodles

water

olive oil

garlic- minced

large tomato - diced
1/4
cup
fresh basil - sliced thinly OR 2 tablespoons dried basil

tablespoons
Parmesan cheese - /plus more for on top
1
chicken breast - cooked or rotisserie chicken - diced
salt and pepper to taste
Instructions
In a large pan, add butternut squash noodles and water to pan.
Bring mixture to a boil, cover and cook for 5 minutes.
Add olive oil, garlic and tomato and stir.
Cook for 3-4 minutes.
Add fresh basil, Parmesan cheese and chicken breast and stir well.
Top with more basil if desired and more Parmesan cheese and salt and pepper to taste.
