Skillet Peach Cobbler

Delicious peaches with a decadent cinnamon cake on top!

Ingredients

  • 2 peaches - skins on or off depending on preference and sliced
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 2 tablespoons corn syrup
  • 3 tablespoons butter
  • For the cake:
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 tablespoon butter
  • 1/4 cup milk
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350 F.
  • In a bowl, add peaches, lemon juice, sugar and corn syrup and stir together.
    Spray pan with non-stick spray and place butter in chunks on the bottom of your 6 inch cast iron or any other oven proof skillet.
  • Add the peach and sugar mixture on top of the butter.
  • In another bowl, add flour, sugar, baking powder, salt and cinnamon and stir together.
  • Add egg, butter, milk and vanilla and blend until batter is well mixed.
  • Pour batter on top of the peaches.
  • Bake for 30 minutes or until cake looks done.
  • Flip cake over to see the peaches on top or serve straight from the bowl.
