Skillet Peach Cobbler
Delicious peaches with a decadent cinnamon cake on top!

- 2 peaches - skins on or off depending on preference and sliced
- 1 tablespoon lemon juice
- 1/4 cup sugar
- 2 tablespoons corn syrup
- 3 tablespoons butter
- For the cake:
- 1/2 cup flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 teaspoon cinnamon
- 1 egg
- 1 tablespoon butter
- 1/4 cup milk
- 1 teaspoon vanilla
Preheat oven to 350 F.
In a bowl, add peaches, lemon juice, sugar and corn syrup and stir together. Spray pan with non-stick spray and place butter in chunks on the bottom of your 6 inch cast iron or any other oven proof skillet. Add the peach and sugar mixture on top of the butter.
In another bowl, add flour, sugar, baking powder, salt and cinnamon and stir together.
Add egg, butter, milk and vanilla and blend until batter is well mixed.
Pour batter on top of the peaches.
Bake for 30 minutes or until cake looks done.
Flip cake over to see the peaches on top or serve straight from the bowl.
