Skillet Peach Cobbler

This skillet peach cobbler is the perfect dessert for 2-4 people! It’s easy to make and tastes delicious! Fresh peaches on the bottom get covered with a decadent cinnamon cake! It’s perfect with a scoop of ice cream or on it’s own.

This dessert is perfect straight from the oven. I like to flip mine over so I can see the peaches on the bottom, kind of like an upside down cake, a perk to this dessert as opposed to one you cook in a deep dutch oven. You can also serve it straight from the skillet too, it’s still going to taste amazing!

What you need to make skillet peach cobbler:

serves 2-4 people

  • 2 peaches – skins on or off depending on preference, pit removed and sliced
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 2 tablespoons corn syrup
  • 3 tablespoons butter
  • For the cake:
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 tablespoon butter
  • 1/4 cup milk
  • 1 teaspoon vanilla

instructions

  1. Preheat oven to 350 F.
  2. In a bowl, add peaches, lemon juice, sugar and corn syrup and stir together.
  3. Spray pan with non-stick spray and place butter in chunks on the bottom of your 6 inch cast iron or any other oven proof skillet.
  4. Add the peach and sugar mixture on top of the butter.
  5. In another bowl, add flour, sugar, baking powder, salt and cinnamon and stir together.
  6. Add egg, butter, milk and vanilla and blend until batter is well mixed.
  7. Pour batter on top of the peaches.
  8. Bake for 30 minutes or until cake looks done.
  9. Flip cake over to see the peaches on top or serve straight from the bowl.
