Healthy Banana Honey Walnut Muffins

Delicious and protein packed muffins with crunchy walnuts folded into the batter.

Ingredients

  • 3 bananas
  • 1/3 cup honey
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 and 1/4 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped walnuts - divided

Instructions

  • Preheat oven to 350 F.
  • Smash the bananas with the honey until they are fairly smooth.
  • Add eggs and vanilla and blend with banana mixture.
  • In another bowl, add flour, almond flour, baking powder and salt and stir together then add to banana mixture and stir.
  • Add the milk and blend batter until it's smooth.
  • Add half of the walnuts and into batter.
  • Spoon into muffin tins, sprinkle other half of walnuts on top of the muffins.
  • Bake for 18-19 minutes or until muffins look baked in the centers.
