Ingredients

  • 5 pounds pears - peeled, cored and sliced into large chunks
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • pinch of cloves

  • Instructions for Pressure cooker or instant pot:
  • Add pears, sugar, lemon juice, cinnamon, nutmeg, ginger, cloves and water to the instant pot or pressure cooker.
  • Cook on high pressure for 30 minutes.
  • Do a quick release, we want the steam to come out and not settle back into the pot.
  • Open lid when safe and bring mixture to a boil, reduce to a low rolling boil and simmer for 20 minutes.
  • With an immersion blender, blend the mixture until smooth.
  • Simmer the sauce for another 10 minutes or until the butter is thick and when pushed with a spoon the mixture keeps the ripple from the spoon without filling back in.

  • Instructions for crockpot or slow cooker:
  • Add pears, sugar, lemon juice, cinnamon, nutmeg, ginger, cloves and water to crockpot.
  • Cook on high for 4 hours.

  • Blend with an immersion blender and cook for another hour on high or until the mixture is thick and a ripple made with a spoon will stay and not fill back in immediately.

  • Instructions for stove top:
  • Add pears, sugar, lemon juice, cinnamon, nutmeg, ginger, cloves and water to a large stock pot.
  • Heat and stir mixture on medium-high heat for 30 minutes or until pears start to release their juices, add additional water if pot gets too dry and pears don't release their juice, you don't want any scorching on the bottom of the pan.
  • Once juices can be seen, cover and let mixture simmer for 1 hour on low heat, stirring frequently so it doesn't burn.
  • When pears are soft and tender, remove lid from pot and simmer for 1-2 hours or until juices start to evaporate and pears start to fall apart.
  • Blend with an immersion blender and simmer for another 30 minutes or until a ripple made with a spoon will stay and not fill back in immediately.
  • Allow to cool and store in a jar in the refrigerator or water bath can this in glass jars for 10 minutes.
