Lemon Poppy Seed Cake

Ingredients

  • 1/2 cup butter - softened
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • zest from 1 lemon
  • 2 tablespoons poppy seeds
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • Lemon glaze:
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon butter - softened
  • pinch of salt

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, add butter and sugar and blend together.
  • Add eggs and vanilla and stir in.
  • Add lemon juice, lemon zest, poppy seeds, flour, baking powder, salt and milk and blend until batter is smooth.
  • Pour into a greased pan and bake for 25-30 minutes or until the center is risen and a tooth pick comes out clean.
  • In a bowl, add together the lemon juice, vanilla, powdered sugar, butter and salt until smooth.
  • Pour over slightly cooled cake and enjoy!
