Lemon Poppy Seed Cake

I love this lemon poppy seed cake! It makes for an easy and delicious breakfast, brunch, snack or dessert. The cake is moist and delicious and all the lemon lovers will love this. It has a sweet and tart lemon glaze on top that tastes great!

I am always in the mood for something lemon and poppy seed flavored. It’s just the perfect flavor combination. The advantage to this cake over muffins is that you can cut as big or as little of a piece you want. It also retains moisture longer so the cake will last a few days more than a muffin would.

What you need to make lemon poppy seed cake:

Makes 1 – 13 by 9 inch cake

  • 1/2 cup butter – softened
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • zest from 1 lemon
  • 2 tablespoons poppy seeds
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk

For lemon glaze:

  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon butter – softened
  • pinch of salt

Instructions

  1. Preheat oven to 350 F.
  2. In a mixing bowl, add butter and sugar and blend together.
  3. Add eggs and vanilla and stir in.
  4. Add lemon juice, lemon zest, poppy seeds, flour, baking powder, salt and milk and blend until batter is smooth.
  5. Pour into a greased pan and bake for 25-30 minutes or until the center is risen and a tooth pick comes out clean.
  6. In a bowl, add together the lemon juice, vanilla, powdered sugar, butter and salt until smooth.
  7. Pour over slightly cooled cake and enjoy!
