Ingredients
~ 1 1/2 pounds salmon
2tablespoonsolive oil
1tablespoonbutter
1teaspoonsalt
1/4teaspoonblack pepper
1tablespoonlemon juice
1tablespoonlime juice
dash cayenne pepper
Instructions
Season salmon with salt and pepper.
In a bowl add lemon juice and lime juice and set aside.
Heat olive oil and butter in a pan on high heat.
When the oil heats up, just before it starts smoking, add salmon skin down and let it sear for about 2 minutes then add lemon and lime juice and reduce heat.
Cover with a lid and let it cook until fish is about 95 percent cooked. Flip over for the last 5 percent of cooking. fish is done when it flakes with a fork.
