citrus pepper salmon

Delicious lemon, lime and pepper seasoned salmon.

Ingredients

  • ~ 1 1/2 pounds salmon
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • dash cayenne pepper

Instructions

  • Season salmon with salt and pepper.
  • In a bowl add lemon juice and lime juice and set aside.
  • Heat olive oil and butter in a pan on high heat.
  • When the oil heats up, just before it starts smoking, add salmon skin down and let it sear for about 2 minutes then add lemon and lime juice and reduce heat.
  • Cover with a lid and let it cook until fish is about 95 percent cooked. Flip over for the last 5 percent of cooking. fish is done when it flakes with a fork.
  • Remove from pan and serve.
