Vegan Scrambled Eggs

Easy tofu scrambled eggs.

Ingredients

  • ~ 1 1/2 pounds salmon
  • 2 tablespoons onion finely diced
  • 1/4 cup water
  • 1 teaspoon onion powder
  • 16 ounces silken tofu
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon turmeric or curry powder
  • dash of chili powder
  • 1/2 teaspoon salt
  • Optional - 1/4 cup vegan cheese
  • Optional - chives fresh or dried

Instructions

  • Heat a pan on medium-high heat and add onion to pan, saute until onion starts to get golden then add water.
  • Add silken tofu and bread it apart in the water and onion mixture.
  • Add onion powder, black pepper, turmeric or curry powder, chili powder and cook until the water evaporates.
  • Add vegan cheese if desired and let it melt into the mixture.
  • Salt and pepper to taste.
  • Top with chopped chives if desired.
