Vegan Scrambled Eggs

Ingredients
~ 1 1/2 pounds salmon

onion
finely diced
1/4
cup
water

teaspoon
onion powder

ounces
silken tofu

teaspoon
black pepper
1/2
teaspoon
turmeric or curry powder
dash of chili powder
1/2
teaspoon
salt
Optional - 1/4 cup vegan cheese
Optional - chives
fresh or dried
Instructions
Heat a pan on medium-high heat and add onion to pan, saute until onion starts to get golden then add water.
Add silken tofu and bread it apart in the water and onion mixture.
Add onion powder, black pepper, turmeric or curry powder, chili powder and cook until the water evaporates.
Add vegan cheese if desired and let it melt into the mixture.
Salt and pepper to taste.
Top with chopped chives if desired.
