Vegan Scrambled Eggs

These vegan scrambled eggs are super easy to make and taste very similar to traditional eggs. They are protein packed and flavorful. I love to add vegan cheese and sprinkle the tops with freeze dried chives. I also love to eat them with a piece of toast.

The turmeric mostly gives these the color we want and can be left out, though I do love these with curry powder in them, it adds a little extra flavor that I enjoy. The vegan cheese and chives are also optional but I do feel they add alot to this recipe.

These “eggs” will keep in the refrigerator for a day or two and can be reheated.

What you need to make vegan scrambled eggs:

Serves 3 people

  • 2 tablespoons onion, finely diced
  • 1/4 cup water
  • 1 teaspoon onion powder
  • 16 ounces silken tofu
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon turmeric or curry powder
  • dash of chili powder
  • 1/2 teaspoon salt
  • Optional – 1/4 cup vegan cheese
  • Optional – chives, fresh or dried

Instructions

  1. Heat a pan on medium-high heat and add onion to pan, saute until onion starts to get golden then add water.
  2. Add silken tofu and bread it apart in the water and onion mixture.
  3. Add onion powder, black pepper, turmeric or curry powder, chili powder and cook until the water evaporates.
  4. Add vegan cheese if desired and let it melt into the mixture.
  5. Salt and pepper to taste.
  6. Top with chopped chives if desired.
