Vegan Vanilla Muffins Four Ways

I am not a vegan but when a recipe is delicious I don’t care if it’s vegan or from the planet Mars! These muffins are that good and you will not notice the absence of dairy or eggs. The texture of these muffins is uniquely perfect and melts in your mouth! I created this recipe to bring to a plant based friend and I also ended up bringing some to a non plant based friend too. They both LOVED the muffins!

I use my vanilla vegan muffin recipe as a base recipe then create different flavors from there. The vanilla vegan muffin recipe is below. Check out my different variations and how to make them.

Blueberry Lemon Muffin variation: Follow the recipe below and then add

1 Tablespoon Lemon zest

1 Tablespoon Lemon Juice

1 cup Blueberries (fresh or frozen)

1/4 cup flour

Toss the Blueberries in the flour before folding berries into the muffin batter. Baking time will be slightly longer, closer to 22 minutes but check at 18.

Lemon Poppy Seed Variation: Follow the recipe below then add 

2 Tablespoons Poppy Seeds

1 Tablespoon Lemon Zest

1/4 Cup Lemon Juice

Optional- 3 Drops Lemon Oil

Glaze with 1/2 Cup Powdered Sugar mixed with 1 Tablespoon Lemon Juice (more to make it thinner)

 

Strawberry Lemon Variation: Follow the recipe below then add

3 Tablespoons Lemon Juice

1 Tablespoon Lemon Zest

Top Each muffin with 1 teaspoon Strawberry Jam before baking and slightly mix it into the muffin batter with a fork.

Optional- Glaze with 1/2 Cup Powdered Sugar mixed with 1 Tablespoon Lemon Juice (more to make it thinner)

Banana Pecan Variation: Follow recipe below then add 

2 Smashed Ripe Bananas

1 Cup Crushed Pecans

1 Tablespoon Cinnamon

1/4 Cup Brown Sugar

Optional Topping: Make a glaze by heating up and mixing 1/2 Cup Peanut Butter, 1/4 cup Honey, 1 teaspoon Cinnamon, and add a pecan on top.

Ingredients

  • 2 1/2 Cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3/4 Cup Sugar
  • 1 1/2 Cups Almond Milk Any other milk will work too
  • 1 teaspoon Apple Cider Vinegar
  • 1/4 Cup Vegetable or Canola Oil
  • 1 Tablespoon Vanilla Extract

Instructions

  • Preheat oven to 375 F.
  • Mix all the dry ingredients together in a bowl. Add all the liquid ingredients directly to the dry ingredients and stir until batter is smooth.
  • Place muffin liners in muffin pan and bake for 18-22 minutes or until a tooth pick can be inserted and come out clean.
