Low Carb Cranberry Bread

This low carb cranberry bread tastes delicious like traditional cranberry bread!

Ingredients

  • 1 cup almond flour
  • 1 cup flour or gluten free baking mix
  • 1 1/2 cups monk fruit sweetener or stevia truvia, sugar or sweetener of choice
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup vegan butter or regular butter
  • zest of 1 orange or about 2 teaspoons
  • 1 tablespoon orange juice
  • 3 eggs
  • 1 cup milk of choice - I use unsweetened almond milk
  • 1 cup fresh cranberries

Instructions

  • Preheat oven to 350 F.
  • Mix together the almond flour, flour, sweetener or choice, salt and baking powder.
  • Add butter, orange zest, orange juice, eggs and milk of choice to the flour mixture and blend until smooth,
  • Fold in cranberries well.
  • Grease a bread pan and pour mixture into pan.
  • Bake for 1 hour and 15- 20 minutes or until top gets golden and a toothpick can be inserted and come out clean.
  • Allow the bread to cool completely before removing from pan and slicing. The almonds will be slightly giggly until cooled.
