Low Carb Cranberry Bread

I love cranberry bread! It makes the holidays feel so festive for me. However, I have been having extra blood sugar issues this year so I created this delicious low carb cranberry bread recipe that tastes like the traditional but is much lower in carbohydrates so I can fully enjoy it!

This recipe has orange zest running through it and that really complements the chunks of cranberries that are spread throughout the bread. I like to use the ultra fine almond flour for a smooth crumb in this bread.

What you need to make low carb cranberry bread:

Makes 1 loaf

  • 1 cup almond flour
  • 1 cup flour or gluten free baking mix
  • 1 1/2 cups monk fruit sweetener or stevia, truvia, sugar or sweetener of choice
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup vegan butter or regular butter
  • zest of 1 orange or about 2 teaspoons
  • 1 tablespoon orange juice
  • 3 eggs
  • 1 cup milk of choice – I use unsweetened almond milk
  • 1 cup fresh cranberries – dusted in 1 tablespoon flour or gluten free baking mix

Instructions

  1. Preheat oven to 350 F.
  2. Mix together the almond flour, flour, sweetener or choice, salt and baking powder.
  3. Add butter, orange zest, orange juice, eggs and milk of choice to the flour mixture and blend until smooth,
  4. Fold in cranberries well.
  5. Grease a bread pan and pour mixture into pan.
  6. Bake for 1 hour and 15- 20 minutes or until top gets golden and a toothpick can be inserted and come out clean.
  7. Allow the bread to cool completely before removing from pan and slicing.
