Creamy Bacon and Roasted Red Pepper Pasta

Ingredients

  • 8 ounces pasta - I use shells but any bite size pasta will work - boil in salted water until cooked
  • 2 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small onion or about 1/2 cup - finely minced
  • 2 cloves garlic - minced
  • 1/2 cup roasted red bell pepper - diced
  • 1/2 cup bacon crumbles or cooked bacon diced up
  • 1/2 cup cream
  • 1/2 cup milk or water
  • 1/2 cup Parmesan cheese - plus more for on top
  • 1 cup mozzarella cheese
  • Pinch of salt
  • Optional - fresh or dried basil on top

Instructions

  • Cook pasta in salted water, drain and set aside.
  • Add olive oil, butter, onion and garlic and saute until onion starts to soften.
  • Add roasted red bell pepper and stir for 1 minute.
  • Add bacon crumbles and stir for another minute.
  • Add cream, milk or water and stir.
  • Add pasta, Parmesan and mozzarella cheese and stir together until everything is melted.
  • Sprinkle with a little salt and top with more Parmesan cheese and fresh or dried basil (optional)
