Creamy Bacon and Roasted Red Pepper Pasta

Ingredients

ounces
pasta - I use shells but any bite size pasta will work - boil in salted water until cooked

tablespoons
olive oil

tablespoon
salted butter
1
small onion or about 1/2 cup - finely minced
2
cloves
garlic - minced
1/2
cup
roasted red bell pepper - diced
1/2
cup
bacon crumbles or cooked bacon diced up
1/2
cup
cream
1/2
cup
milk or water
1/2
cup
Parmesan cheese - plus more for on top
1
cup
mozzarella cheese
Pinch
of salt
Optional - fresh or dried basil on top
Instructions
Cook pasta in salted water, drain and set aside.
Add olive oil, butter, onion and garlic and saute until onion starts to soften.
Add roasted red bell pepper and stir for 1 minute.
Add bacon crumbles and stir for another minute.
Add cream, milk or water and stir.
Add pasta, Parmesan and mozzarella cheese and stir together until everything is melted.
Sprinkle with a little salt and top with more Parmesan cheese and fresh or dried basil (optional)
