Creamy Bacon and Roasted Red Pepper Pasta

This creamy bacon and roasted red pepper pasta is super decadent, cheesy, creamy and delicious! It’s also easy to make and I guarantee everyone will love it!

This recipe makes me feel like I have an Italian heritage, I don’t that I know of, I am mostly swedish and english from what I can tell through my generology. However, I would like to think my soul is at least in part Italian. It love italian flavors and approaches to food and family, it speaks to who I am at my core. To feed people that I love delicious food and enjoy their company, what could be better in life.

Here is what you need make creamy bacon and roasted red pepper pasta:

Serves 4 people

  • 8 ounces pasta – I use shells but any bite size pasta will work – boil in salted water until cooked
  • 2 tablespoons olive oil
  • 1 tablespoon salted butter
  • 1 small onion or about 1/2 cup – finely minced
  • 2 cloves garlic – minced
  • 1/2 cup roasted red bell pepper – diced
  • 1/2 cup bacon crumbles or cooked bacon diced up
  • 1/2 cup cream
  • 1/2 cup milk or water
  • 1/2 cup Parmesan cheese – plus more for on top
  • 1 cup mozzarella cheese
  • Pinch of salt
  • Optional – fresh or dried basil on top

Instructions

  1. Cook pasta in salted water, drain and set aside.
  2. Add olive oil, butter, onion and garlic and saute until onion starts to soften.
  3. Add roasted red bell pepper and stir for 1 minute.
  4. Add bacon crumbles and stir for another minute.
  5. Add cream, milk or water and stir.
  6. Add pasta, Parmesan and mozzarella cheese and stir together until everything is melted.
  7. Sprinkle with a little salt and top with more Parmesan cheese and fresh or dried basil (optional)
  8. Enjoy!
