Shrimp Fajita Stuffed Bell Peppers

Delicious and healthy shrimp fajitas in a roasted bell pepper.

Ingredients

  • 2 red bell peppers - sliced in half lengthwise seeds and core removed and roasted (20 minutes at 425 F. ) or air fried (10 minutes, 400 F.)
  • 2 tablespoons olive oil
  • 1/2 red onion - sliced into strips
  • 3 cloves garlic - minced
  • 1 jalapeno - seed and inside vein removed
  • dash of cumin
  • 1 teaspoon chili powder
  • pinch or two of salt
  • 6 ounces shrimp - any size fresh or frozen, shells and tails removed
  • 1 lime - divided in half half for shrimp, other half sliced into wedges for garnish

Instructions

  • Slice red bell peppers in half lengthwise and remove seeds and core.
  • Roast in air fryer for 10 minutes at 400 F. or in a 425 F. oven for 20 minutes.
  • Slice your red onion, garlic, remove seeds and inside vein of jalapeno and dice.
  • Add olive oil to a pan, add in onions and jalapenos first, cook until onions start to soften then add the garlic and shrimp.
  • Add cumin, chili powder and salt and cook until shrimp is cooked.
  • Squeeze half of the lime over the shrimp and remove from heat.
  • Fill your red bell peppers with shrimp and onion mix and top with your favorite toppings.
