Shrimp Fajita Stuffed Bell Peppers
Delicious and healthy shrimp fajitas in a roasted bell pepper.

Ingredients
2
red bell peppers - sliced in half lengthwise
seeds and core removed and roasted (20 minutes at 425 F. ) or air fried (10 minutes, 400 F.)

tablespoons
olive oil
1/2
red onion - sliced into strips
3
cloves
garlic - minced
1
jalapeno - seed and inside vein removed
dash of cumin
1
teaspoon
chili powder
pinch
or two of salt

ounces
shrimp - any size
fresh or frozen, shells and tails removed

lime - divided in half
half for shrimp, other half sliced into wedges for garnish
Instructions
Slice red bell peppers in half lengthwise and remove seeds and core.
Roast in air fryer for 10 minutes at 400 F. or in a 425 F. oven for 20 minutes.
Slice your red onion, garlic, remove seeds and inside vein of jalapeno and dice.
Add olive oil to a pan, add in onions and jalapenos first, cook until onions start to soften then add the garlic and shrimp.
Add cumin, chili powder and salt and cook until shrimp is cooked.
Squeeze half of the lime over the shrimp and remove from heat.
Fill your red bell peppers with shrimp and onion mix and top with your favorite toppings.
