Shrimp Fajita Stuffed Peppers

What do you think about when you don’t have to think about anything? For me it’s recipe creations, it’s my passion and these shrimp fajita stuffed peppers are one of those day dream recipes that I got to turn into a reality tonight. They tuned out so delicious and I couldn’t wait to share the recipe with all of you! These fajitas are super flavorful AND they are healthy!

I love a good fajita, shrimp fajitas are no exception! I love that shrimp is not only delicious but super quick and easy to make too. This recipe is great for a busy weeknight and it’s also fancy enough to entertain and impress the pants off your guest with.

The most time consuming part of making this recipe is cooking the red bell peppers. I short cut that step by slicing them in half, taking out the seeds and core and cooking them in my air fryer at 400 F. for 10 minutes, they will be perfectly roasted by the time all your shrimp is cooked and ready to go. If you don’t have an air fryer then you can roast them in the oven for about 20 minutes on 425 F.

What you need to make shrimp fajita stuffed peppers:

Serves 2

  • 2 red bell peppers – sliced in half lengthwise, seeds and core removed and roasted (20 minutes at 425 F. ) or air fried (10 minutes, 400 F.)
  • 2 tablespoons olive oil
  • 1/2 red onion – sliced into strips
  • 3 cloves garlic – minced
  • 1 jalapeno – seed and inside vein removed
  • dash of cumin
  • 1 teaspoon chili powder
  • pinch or two of salt
  • 6 ounces shrimp – any size, fresh or frozen, shells and tails removed
  • 1 lime – divided in half, half for shrimp, other half sliced into wedges for garnish

Optional Toppings:

  • Avocado
  • lime wedges
  • cilantro
  • cojita cheese
  • sour cream

Instructions

  1. Slice red bell peppers in half lengthwise and remove seeds and core.
  2. Roast in air fryer for 10 minutes at 400 F. or in a 425 F. oven for 20 minutes.
  3. Slice your red onion, garlic, remove seeds and inside vein of jalapeno and dice.
  4. Add olive oil to a pan, add in onions and jalapenos first, cook until onions start to soften then add the garlic and shrimp.
  5. Add cumin, chili powder and salt and cook until shrimp is cooked.
  6. Squeeze half of the lime over the shrimp and remove from heat.
  7. Fill your red bell peppers with shrimp and onion mix and top with your favorite toppings.
  8. Enjoy!
