15 Minute Steak Fajitas


These 15 minute steak fajitas are quick and delicious! Steak, peppers, onions with some easy and tasty seasonings, along with your favorite toppings. Some nights are crazy at my house, I know, total shocker, with 4 little kids running around. Ha! I am sure everyone else in the world can relate to the night time hustle some days and those nights you need dinner in a flash!

You will need a few ingredients ahead of time, so if you are anticipating a busy night during the week, stock up on these ingredients when you stop or meal prep. These are also awesome to make ahead of time and bring for lunches or just reheat for dinner when you have limited time to eat, or any day really, because these are yummy!

What you need to make 15 minute steak fajitas:

For peppers and onions:

  • 1 red bell pepper – sliced into thin strips
  • 1 orange bell pepper – sliced into thin strips
  • 1 onion – sliced into thin strips
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 cup water
  • 1 tablespoon lime juice

For steak:

  • ~1 and 1/2 pounds of top round steak thin sliced or any meat thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon garlic
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili powder

Optional ingredients for assembly:

  • Corn or flour tortillas
  • salsa
  • guacamole
  • sour cream
  • Fresh cilantro
  • shredded cheese

Instructions

  1. Slice peppers and onions and add to a pan.
  2. Add olive oil, garlic powder, black pepper, chili powder, cumin and salt.
  3. Cook over medium-high heat for 2 minutes.
  4. Add water and lime juice and cover pan for 3 minutes.
  5. Remove pan and cook out the remaining water.
  6. Stir the onions and peppers in the juices and seasoning from the evaporated water.
  7. They should get nice and caramelize, remove from heat and set aside.
  8. For the steak, season each side of the steak with salt, garlic black pepper and chili powder.
  9. Heat olive oil in a pan and right before the pan starts to smoke, add the steak and sear on each side for ~2-3 minutes each side.
  10. Remove from pan and let it rest for 3 minutes, then slice into strips against the grain of the meat.
  11. To assemble, fill tortillas with peppers and onions, steak and any toppings you want to add.
