salted butter - room temperature
1/4

peanut butter or nut butter of choice

sweetener of choice
monk fruit, stevia, splenda, etc.

teaspoon
vanilla extract

egg

almond flour
1
tablespoon
coconut flour - if you don't have coconut flour you can use an additional teaspoon of almond flour

flax seed meal

teaspoon
baking soda
1/4
teaspoon
salt
Optional mix in's:
1/4
cup
walnuts
cashews, almonds, pecans or what ever nut mix you want
1/4
cup
sugar free or dark chocolate chips
Chia seeds
hemp hearts
unsweetened coconut flakes
Instructions
Preheat oven to 375 F.
Blend together the butter, nut butter, sweetener of choice and vanilla extract.
Add in the egg and blend.
In another bowl add together the almond flour, coconut flour, flax seed meal, baking soda and salt and mix well.
Add dry mixture into the wet mixture and blend until well mixed.
Add in your desired mix in's, like nuts, chocolate chips, chia seeds, hemp hearts, coconut flakes, etc.
Roll into 14 balls and place on a greased for parchment paper lined cookie sheet and press them down slightly.
Bake for 8-9 minutes, remove from oven and let them cool slightly before moving them to a cooling rack.
