Keto Monster Cookies

These cookies are a delicious, low carbohydrate and high fat treat!

Ingredients

  • 1/4 cup salted butter - room temperature
  • 1/4 cup peanut butter or nut butter of choice
  • 3/4 cups sweetener of choice monk fruit, stevia, splenda, etc.
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups almond flour
  • 1 tablespoon coconut flour - if you don't have coconut flour you can use an additional teaspoon of almond flour
  • 2 tablespoons flax seed meal
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional mix in's:
  • 1/4 cup walnuts cashews, almonds, pecans or what ever nut mix you want
  • 1/4 cup sugar free or dark chocolate chips
  • Chia seeds
  • hemp hearts
  • unsweetened coconut flakes

Instructions

  • Preheat oven to 375 F.
  • Blend together the butter, nut butter, sweetener of choice and vanilla extract.
  • Add in the egg and blend.
  • In another bowl add together the almond flour, coconut flour, flax seed meal, baking soda and salt and mix well.
  • Add dry mixture into the wet mixture and blend until well mixed.
  • Add in your desired mix in's, like nuts, chocolate chips, chia seeds, hemp hearts, coconut flakes, etc.
  • Roll into 14 balls and place on a greased for parchment paper lined cookie sheet and press them down slightly.
  • Bake for 8-9 minutes, remove from oven and let them cool slightly before moving them to a cooling rack.
