Ingredients
1red bell pepper -coredcut into chunks
2cupsmushroom slices -I used white mushroomsbaby Bella’s would work too
1red onion - chunked
2zucchini - chunked
1 1/2poundschicken breast cut into chunks
Salt and black pepper
Italian salad dressing - pick your favorite brand
Instructions
Preheat pellet grill or oven to 400 F.
Chop and prep all veggies and meat and lay in sections on a cookie sheet.
Season tops with salt and pepper.
Add Italian dressing on top of everything like you’re topping a salad.
Cook for 30 minutes or until everything looks cooked and good, pull off grill or out of oven, stir veggies and chicken in the juices on the bottom of the pan, it makes a magical sauce on the bottom of the pan with everything’s flavors combined.
Serve on it’s own or on top of or along side rice or cauliflower rice.
