Cauliflower Chicken Alfredo

Low carb version of the classic chicken Alfredo.

Ingredients

  • 1 Steam-able bag of cauliflower florets or about 2 1/2 cups cauliflower florets - cooked
  • 1/2 pound chicken tenders
  • Salt and pepper
  • 1 tablespoon minced garlic
  • 3 tablespoons bacon crumbles
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 1/2 teaspoon flour
  • 1/2 cup half and half or milk of choice
  • 3 tablespoons Parmesan cheese

Instructions

  • Steam or cook your cauliflower and set aside.
  • Season chicken tenders with salt and pepper and cook in a skillet until cooked through.
  • Remove from pan and set aside.
  • Add garlic, bacon bits, butter, olive oil to skillet, cook until garlic starts to soften then sprinkle with flour, stir then add half and half or milk.
  • Add Parmesan cheese, cauliflower and chicken and stir until everything is covered.
  • Enjoy!
