Breakfast Veggie Hash

Ingredients

  • 2 russet potatoes - diced
  • 1 small onion - diced
  • 1 cup bell peppers - diced
  • 3 tablespoons olive oil
  • 1 medium zucchini - diced
  • 1 cup chopped broccoli
  • 2 teaspoons salt
  • 1 teaspoons onion powder
  • 1/2 teaspoons black pepper - plus more to taste
  • 1/2 cup bacon bits or pieces

Instructions

  • Heat a skillet with olive oil and add potatoes, onion and bell peppers.
  • Cook and stir until potatoes start to brown slightly.
  • Add zucchini, broccoli, salt, onion powder, black pepper and bacon bits and continue cooking and stirring until potatoes and vegetables are cooked through.
