Zucchini Lo Mein

Ingredients

medium zucchini - enough for about 6 cups raw zoodles or thinly sliced zucchini

sesame oil

chicken breast - diced

cloves
garlic - minced
1
small yellow onion - sliced
1
large red bell pepper - sliced into thin strips
1/2
teaspoon
salt - plus more to taste
1/4
teaspoon
ground ginger
1/2
teaspoon
garlic powder
~2 cups snow peas - I just grab two big handfuls

tablespoons
soy sauce or liquid aminos

tablespoon
sweet chili sauce
Instructions
Spiralize zucchini and set aside.
Slice the onions, peppers, mince your garlic and chunk up your chicken breast.
Add sesame oil to pan and heat to medium high heat.
Add chicken, sliced onions, bell pepper and garlic and sprinkle with salt, garlic powder and ground ginger.
Saute until chicken is cooked through and onions and peppers are softened.
Add snow peas and zucchini and saute and stir for a few minutes.
Add the soy sauce or liquid aminos and sweet chili sauce and stir until zucchini softens and everything is stirred well together.
Remove from heat and enjoy.
